Uớp gan bò với 200gr đường, 1 muỗng canh ngũ vị hương, 1 muỗng canh muối, 1 muỗng canh hạt nêm, 15ml hắc xì dầu, 150ml nước tương, 5gr sả băm, 5gr gừng cắt sợi và 5gr tỏi băm. Trộn thật đều rồi cho gan bò vào ướp qua đêm trong tủ lạnh cho gan thấm gia vị đậm đà.
Sau đó bạn nướng gan ở nhiệt độ 160 độ trong khoảng 1 tiếng, bạn nhớ trở mặt sau 1/2 thời gian nướng. Nướng cho đến khi gan bò khô mặt và chuyển sang màu đen tuyền. Nước ướp gan bò bạn đừng bỏ nhé, sẽ để lại để dùng rim gan bò rất thơm đó.
Gan bò để cho nguội bớt rồi dùng dao cắt thành các miếng nhỏ. Bạn cho hết tất cả vào chảo rồi thêm 350ml nước dừa và nước ướp gan bò. Sau khi nước dừa sôi bạn vặn nhỏ lửa lại. Đun cho đến khi nước sệt , gan bò thấm đều gia vị thì tắt bếp.
Gọt vỏ bào sợi đu đủ xanh rồi ngâm cùng 300ml nước và 50ml giấm cho bớt nhựa rồi vắt ráo. Ngâm đu đủ trong nước lạnh nếu muốn ăn đu đủ giòn.
Bạn pha nước chấm chua ngọt ăn gỏi bằng 100ml nước, 80ml giấm, 60gr đường nấu cho sôi rồi để nguội mới thêm 1 muỗng cà phê ớt băm vào.
Bạn xếp đu đủ ra dĩa, thêm khô bò thỏa thích rồi ăn kèm với bánh phồng tôm, đậu phộng rang, rau răm. Rót thêm chén nước chấm chua chua ngọt ngọt là có thể thưởng thức thành quả của mình. Dĩa gỏi khô bò đảm bảo chất lượng và ngon hơn ở ngoài nhiều nhé!
